Clai: Where Istria's Heart Touches Wine

The Clai winery, idyllically located in the heart of Istria, is a true gem of organic winemaking. Under the leadership of Giorgio Clai, a winemaker with vision and passion, the winery has become synonymous with quality and authenticity. Spanning 10 hectares of vineyards and 5 hectares of olive groves in the picturesque landscape around the village of Krasica, south of Buje, the vines and olive trees thrive under ideal conditions.

The proximity to the Adriatic Sea and an elevation of about 200 meters create a perfect microclimate where grapes can fully express their flavors. Clai's terroir is characterized by calcareous flysch soil, known for its low fertility and good drainage. These conditions put natural stress on the vines, leading to the production of high-quality grapes.

Giorgio Clai and his team place great emphasis on organic farming and completely avoid systemic treatments such as herbicides, insecticides, or fungicides. Fertilization is done sparingly and exclusively with organic materials. Winemaking at Clai follows a natural approach. Grapes spontaneously ferment on their skins without the addition of enzymes, selected yeasts, or lactic acid bacteria. The wines age in various-sized wooden barrels and spend a long time on the lees, which imparts complexity and depth. After nearly two years of aging, the wines are bottled without micro or sterile filtration to preserve their natural purity and terroir character. Giorgio Clai views each vintage as unique, believing there are no "good" or "bad" vintages when working in harmony with nature.
