Product details

The JNK Sveti Mihael is a fascinating blend from the heart of the Vipava Valley, capturing the essence of Slovenian wine tradition. With an alcohol content of 15% and a cellar life of at least 10 to 15 years, this wine presents itself as a true masterpiece of winemaking. The wine's color is an inviting orange, reminiscent of sun-soaked vineyards.

Its complexity begins in the bouquet, where a harmonious blend of ripe fruits and subtle wood notes seduces the senses. On the palate, the JNK Sveti Mihael reveals impressive depth with layers of dried apricots, honey, and a hint of spices highlighted by the two-week maceration and aging in small wooden barrels. The texture is rich and almost velvety, with well-balanced acidity that gives the wine a refreshing liveliness. The finish is long and enduring, leaving a lasting impression of elegance and sophistication.

Recommended Enjoyment Moments with JNK Sveti Mihael

The JNK Sveti Mihael is a versatile companion for a range of culinary experiences. It pairs particularly well with Asian and flavor-intensive dishes. Its rich structure and aromatic complexity make it an ideal partner for spicy curry dishes or seared duck. Serve this wine slightly chilled at around 12-14°C to bring out its flavors fully. It is also an excellent choice for a relaxed evening with friends, where it serves as a conversation piece about the world of wines. Its versatility allows you to enjoy it on special occasions as well as everyday meals.

For optimal storage of JNK Sveti Mihael, it is recommended to keep it in a cool, dark place at a constant temperature. The bottle should be stored horizontally to keep the cork moist. This wine has great aging potential and develops even more complex aromas over time. Open the bottle about an hour before consumption to let the wine breathe and unfold its full range of aromas.

Masterpiece from Marl: The Mervič - JNK Winery and Its Wine Philosophy

The Mervič - JNK Winery, located in the picturesque landscape of Slovenia, is a place where tradition and modern winemaking meet. Spread across 3.5 hectares of vineyards at elevations ranging from 100 to 300 meters above sea level, the Mervič - JNK Winery cultivates a variety of grape varieties on a unique marl-rich soil known as Opoka. This soil imparts special minerality and depth to the wines.

The winery primarily focuses on producing white grape varieties like Rebula, Chardonnay, Green Sauvignon (Jakot), Pinot Blanc, some Malvasia, and Sauvignon. Cabernet Sauvignon and Merlot take center stage among the red grape varieties. In line with the winery's philosophy of prioritizing quality over quantity, they work within the integrated production system, resulting in lower yields per vine and higher grape quality. Grapes are carefully selected during harvest. Maceration of white grapes typically lasts 3-5 days, sometimes up to 8, while red grapes macerate for about 30-40 days.

The wines mature in oak barrels, where they remain for 1-2 years, aging on their own yeasts. The goal of the Mervič - JNK Winery is to produce wines suitable for aging. Therefore, the sale of bottled wines begins only after 3-4 years or more, with the wines aging in the bottles for at least a year after bottling. The philosophy of the Mervič - JNK Winery is to cultivate high-quality grapes essential for the production of top wines with protected geographical origin. This is reflected in every glass of wine they produce – a tribute to the terroir, passion, and craftsmanship that goes into each drop.
