The Mervič - JNK Winery, located in the picturesque landscape of Slovenia, is a place where tradition and modern winemaking meet. Spread across 3.5 hectares of vineyards at elevations ranging from 100 to 300 meters above sea level, the Mervič - JNK Winery cultivates a variety of grape varieties on a unique marl-rich soil known as Opoka. This soil imparts special minerality and depth to the wines.
The winery primarily focuses on producing white grape varieties like Rebula, Chardonnay, Green Sauvignon (Jakot), Pinot Blanc, some Malvasia, and Sauvignon. Cabernet Sauvignon and Merlot take center stage among the red grape varieties. In line with the winery's philosophy of prioritizing quality over quantity, they work within the integrated production system, resulting in lower yields per vine and higher grape quality. Grapes are carefully selected during harvest. Maceration of white grapes typically lasts 3-5 days, sometimes up to 8, while red grapes macerate for about 30-40 days.
